Avocado Toast with Jammy Eggs, Pine Nuts & Cracked Pepper

This isn’t your basic avo toast. It’s elevated. It’s creamy, crunchy, peppery perfection. The jammy eggs add richness, the pine nuts bring a buttery crunch, and the cracked black pepper ties it all together with a little attitude.

Ingredients (Serves 2)

  • 2 slices hearty bread (sourdough, multigrain, or gluten-free)

  • 1 large ripe avocado

  • 2 large eggs

  • 1 tablespoon pine nuts (toasted if you have time)

  • Salt, to taste

  • Freshly cracked black pepper

  • Olive oil (optional, for drizzling)

  • Red pepper flakes or everything bagel seasoning (optional)

Instructions

  1. Boil the eggs (jammy-style)

    Bring a small pot of water to a boil. Gently lower in the eggs and boil for 6½ to 7 minutes for that perfect jammy center. Immediately transfer to an ice bath to stop cooking. Peel when cool.

  2. Toast the bread

    Toast your bread slices until golden and crisp. Bonus points if you butter the edges.

  3. Mash the avocado

    In a bowl, mash the avocado with a pinch of salt. Keep it a little chunky if that’s your vibe.

  4. Assemble the toast

    Spread mashed avocado over each slice of toast. Slice the jammy eggs in half and place on top. Sprinkle with pine nuts, lots of cracked pepper, and any optional toppings (red pepper flakes, EBS, or a drizzle of olive oil).

  5. Serve with pride

    Serve immediately, preferably while it’s still warm and before tiny hands steal the pine nuts.
